There’s buzz around Westport about the opening of The Cottage. When Chef Bill Taibe handed the spatula over to Chef Brian Lewis, it was one of the mixed-emotions moments that happens when something good ends yet you anticipate something different, new and wonderful is just beginning. After all, Lewis being one of Connecticut’s most influential chefs and has earned a reputation for his innovative dishes. His food and commitment to local farmers and food artisans has also secured him accolades from diners and critics alike. He was the opening Executive Chef of The Bedford Post Inn, a Relais & Chateaux property that featured two restaurants, The Barn and The Farmhouse; plus, he launched the popular Elm restaurant in New Canaan.
“My wife, Dana, and I have fallen in love with Westport over the years, spending so much of our free time here with our boys, Jude and Jax,” says Lewis. “The food scene here, the community of chefs, and farmer’s market have always been a big part of my day-to-day life.”
The menu will be updated maximizing locally sourced and seasonal ingredients. “The menu celebrates cultures of Italy, Spain, France, Japan and, most importantly, our direct Northeast region,” he notes.
So diners unfurl their napkins with nothing but high hopes as the forty-four-seat restaurant readies to fire up the ovens and opens its doors, starting December 4.
