Chef and partner Aarón Sánchez is putting together a specially curated, Latin-inspired prix fixe menu for the occasion made up almost entirely of off-the-menu dishes. Luxe ingredients such as black truffles, seared foie gras and the season's best produce will make 2014 a year to remember and 2015 one to anticipate.
Menu Details:
– All guests will be given an amuse-bouche and a complimentary glass of sparkling wine with dessert
– Each guest will select one item from the following categories: botanas (starters), entrées and desserts
– Pricing is based on entrèe chosen, which range between $75-85 per person (not including tax or tip)
BOTANAS
- Lobster Ceviche / coconut milk, ginger, sour orange, achiote habanero
- Winter Salad / shaved beets, carrots, brussels sprouts, bitter greens, roasted jalapeno vinaigrette
- Slow-Cooked Yard Bird Egg / house made chorizo, chanterelle mushrooms, creamy grits, black truffle
- Mexican Five Spice Grilled Quail / black lentils, beets, rose petal vinaigrette
- Crispy Sweetbreads / pickled chile guero, tamarind, pasilla chile, seared foie gras
- Crispy Shrimp / chile chipotle key lime aioli, pickled pepper salad
- Braised Beef Cheek Sope / roasted bone marrow, epazote bread crumbs

- Pan Roasted Black Bass Vatapa / ground almonds, thai bird chiles, shrimp, coconut milk
- Slow Cooked Goat / cauliflower bacaloa puree, grilled escarole, negro modelo reduction
- Pork Shank Pibil / yucca cabbage salad, black bean pork belly feijoada, habanero onions
- Paella for Two / arroz bomba, saffron, chorizo, shrimp, lobster, squid, piquillo pepper aioli (shared)
- Grilled Rib Eye / oxtail bone marrow enchilada, salsa verde, chile yukon gold potatotes
- Spit-Roasted Pollo Rancho Luna / cuban marinade, arroz con gandules, lime fresno mojo

– The prix fixe menu will be available with reservations only. Dinner reservations start at 5pm, with the last seating at 9:45pm.
– The restaurant will be offering an a-la-carte version of this menu at the bar and no reservations are needed for the bar. Seating will be first come, first served.
– The bar will be open until 2am — a first for Paloma! And from 11pm – 2am, all bubbly will be 50% off.
– Last but not least, the restaurant will be decked out with holiday décor and party favors to ring in the new year with flare.
