TOMATO MOZZARELLA PESTO SKEWERS

(makes 24 pieces)

24 round cherry tomatoes with the tops cut off
12 ciliegine-size fresh mozzarella, each cut in half
6 teaspoons fresh pesto (commercial pesto works well in a pinch)
8-10 basil leaves cut in thin slivers for garnish

Method
Scoop out the tomato halves. Place half a teaspoon of the pesto inside the tomato. Place piece of mozzarella round side down inside the tomato. Garnish with slivers of fresh basil.


WATERMELON CUBES WITH FETA, LOCAL HONEY & FRESH MINT

(makes 24 pieces)

24 one-inch-square-square cubes of seedless watermelon
24 pieces of feta cheese (cut in small pieces)
½ cup of local honey
1 bunch fresh mint chopped in fine pieces

Method
Using a melon baller, scoop out an indentation on the top of the watermelon cube. Place the feta cheese on top of the watermelon. Drizzle the honey over the top. Garnish with fresh mint.
