ED FREEDMAN gets his buzz from one deep, dark place: coffee. He brings his passion for all things coffee—baristas, pour-overs, cold brew, lattes—to the Brick Walk. SHEARWATER ORGANIC COFFEE ROASTERS is some 1,200 square feet of organic, small-batch coffee roasting and café treats. Thrillist.com named it one of the fifteen best new coffee roasters in America. America, people! We are the center of the nation! Or at least that’s how it feels when the Organic Homacho Waeno Ethiopian Roast kicks into full gear.
Shearwater started in 2013 via gourmet markets and area chefs, among others. Evolving the business, the new shop and café boasts a modern industrial design, thanks to Amber Freedman, Ed’s Boston-based architect daughter. The floor-to-ceiling windows let light flood in like the first cup of the day.
Enthusiasts will coo over the cool equipment, like the Faema E71 espresso machine, and talk shop with the baristas, who are fluent in single-origin coffee, roast profiles and brewing techniques. Manager Jason Varga pulls on his experience working at Espresso Neat and Tusk & Cup.
Along with the brew, including cold brew on tap, the café tempts with pastries from Huckleberries Artisan Pastries and The Bee and the Bar gluten-free offerings; and teas from Leaf & Ardor.
